Ingredients:
- 1 1/2 cups whole wheat flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tbsp poppy seeds
- 1 lemon zest and juice
- 1/2 cup plain yogurt
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with paper liners
In a large bowl, mix together the whole wheat flour, sugar, baking powder, baking soda, salt, and poppy seeds
In a separate bowl, combine the lemon zest, lemon juice, yogurt, vegetable oil, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; it's okay if there are a few lumps
Divide the batter evenly among the muffin cups, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
Once cooled, you can optionally drizzle a simple lemon glaze on top for extra lemony flavor
